Asian-style Noodle Soup
Ingredients
- 80g Japanese spinache noodles
- 50g instant coconut-milk powder
- 3/4 cup soup mix (containing peas, lentils, barley, etc.)
- 2 tsp. sesame seeds
- 1 veggie-stock cube
- salt, Chinese mixed spices, coriander seeds, parsley
We mixed all dry ingredients and stowed them in a zip-lock plastic bag. Noodles were kept separately. We also take an extra jar with salt.
How to do it
Add ingredients (not noodles) 800 mL of water and bring to the boil. Boil for 5-10 min. Kill the flame and wait for 10-15 min to safe fuel (the food will continue to swell and cook). Bring to the boil again, add noodles and cook for the time needed for the noodles to become aldente (probably 3-5 min, according to instructions).
Opinion
Delicious! Filling. ~280g dry. Fuel consumption minimal.

The ingredients. |
Ingredients
- 3/4 cup of Polenta (we used a version that needs 15 boiling according to the label)
- 1/4 cup red lentils
- 1 handful of sun-dried tomatos
- 1/2 teaspoon dried garlic chips
- salt, pepper, mixed spices, cardamom
- olive oil, butter or margarine
- 50 g ground Parmesan cheese
We mixed all dry ingredients and stowed them in a zip-lock plastic bag. Parmesan and olive oil were kept separately. We also take an extra jar with salt.
How to do it
Boil 1 L of water. Add the content of the plastic bag and boil until Polenta soaks up all the water and swells. Kill the flame and wait for 10-15 min to safe fuel (the Polenta and lentils continue to swell and cook). Add oil and fry briefly until the stew is hot again. Add cheese, season and serve.

The 2-persons dinner readily packed for the hike. |
Really tasty, full of energy, plenty of protein, calcium and some polyunsaturated fatty acids! A nice hiking meal, though not the easiest and fastest to cook. Depending on the stove or fire you use for cooking, the time for preparation will vary. Using a 'MSR whisterlite international' with Shellite, it took us about 20-25 min to have our dinner ready. ~240g dry, fuel consumption minimal.
